We can’t call this whiskey is created from a corn heavy mash bill containing corn, Rye, wheat, oats and barley. We ferment this mash for 13 days to fully achieve as much flavour from the grain base. Canadian standards on whiskey production require a whiskey to be aged for three years in an oak barrel, we create this in a more rapid method using oak chips. Same great whiskey taste, we just can’t call it whiskey.
